Black Bean Soup

Despite the occasional 50-degree day, Connecticut’s gotten a lot of snow this winter. After a cold day at work and a two-mile trudge home through the snow and ice, there’s nothing that makes me happier than coming home to a hot bowl of soup. Black bean soup is healthy, hearty fare that’s sure to warm you up from the inside out. This recipe is extremely simple, but it does take time. Simmering dried black beans right in the stock is key to this soup’s full-bodied flavor. I’ve tried all kinds of shortcuts, but black bean soup thrown together in half an hour with canned beans…

Budget Day: Time to Tax Meat?

We’ve heard much talk in recent months about a proposed tax on sugar in order to help combat Britain’s obesity epidemic. But when it comes to unhealthy, disease-causing foods that drive up health-care costs, there’s another obvious culprit – meat and other animal products. Just in time for the Chancellor’s budget speech, PETA President Ingrid E Newkirk has come up with a practical, money-saving suggestion that would score highly on both the …

Cranberry Scones with Lemon Glaze

Beneath their crunchy exteriors, these cranberry scones are soft and buttery, complemented by a tart, sweet lemon drizzle. Is anyone else in total spring mode right now? I know it’s more than a little preemptive, but lately all I want to do is drink green smoothies and wear t-shirts …

Pasta with Mushrooms and Artichokes

The night before Thanksgiving I knew I had to make a pasta dish for carbo loading purposes. While we weren’t with the whole family at the Cincinnati Thanksgiving 10k, we did run the 5k in Boise (plus I added another 3.1 around the block to get the true T-day 10k feeling). It was my first time pushing Violet in the jogging stroller during a race and we had so much fun together. The Boise race was dog friendly so she was entertained as we ran past them and they ran past us.While I’m a marinara lover through and through, I didn’t want something so acidic…

Fruitcake Cookies

Starting in late October, I create a document where I copy and paste Christmas cookie ideas for the year. I generally try to make about 6-8 of the old favorites and 6-8 new cookies. Since my Kitchenaid mixer didn’t make it to Boise, along with my rolling pin, silpat, cookie cutters and a few other baking essentials, I had to rethink the list. While I normally make Gingerbread men cut outs, sugar cookie Christmas trees, chocolate sugar cookie snowflakes and spritz cookies, …

Blueberry Rhubarb Sour Cream Coffee Cake

chai and snacks… I’ve recently discovered the joy of a cup of flavor filled tea in the evenings and am ever ready to experiment with various herbal teas. I do, however, think that the right snack to complement the tea is essential for a complete and satisfying teatime experience. My pantry is stocked with a wide variety of snacks from the Indian store for this reason. Every once in a while though, I like to switch things up a bit and bake something delicious. I will share one such teatime favorite today. Here goes – Blueberry Rhubarb…

Imperfect Progress: Embracing what IS!

I am not perfect. Sometimes I fall down. Sometimes I let things get the best of me. Sometimes STILL I eat to control, I don’t work to my potential, sometimes STILL feel a step behind. It’s not about perfection: its about progress. Do not forget how far you have come. I was 162 pounds at my highest. I went through many different ways to eat and fuel my workouts over the past 8 years: everything from weight watchers to a competition diet. And today, I am just UNDER my weight watchers goal weight. But that is a little high for me. I feel like I eat when I am out of control: Sad, busy, frustrated, confused, tired…

When the picky comes out

I had a feeling it would happen eventually, which is why I chose to be thankful for each day Liv would eat ANYTHING under the sun. I’ve found that a lot of things (just like with an adult) can affect her appetite, especially if she’s been sick or is teething. Now that she’s much better after being sick a couple of weeks ago, we’ve all noticed that her preferences are very different. Aaaaand she only wants…

Inconsistency

When I went back to Weight Watchers last month, and discovered I had to pay again (I was a free Lifetime member for over a year, but if you are over goal weight, then you have to pay), I had a big reason to get back to goal. I guess I just thought it would be easy–eat right for a …
