Greek Morning Scramble

Serves 1

Ingredients

  1. 2 organic eggs
  2. 1 teaspoon olive oil
  3. ½ spring onion, sliced
  4. 6 cherry tomatoes, sliced in half
  5. ¼ cup pitted kalamata olives, roughly chopped
  6. 2 tablespoons crumbled feta cheese
  7. 2 tablespoons parsley, roughly chopped

Instructions

  1. Crack the eggs in a small bowl and whisk thoroughly.
  2. Warm the olive oil in a small saute pan over medium-low heat. Add the spring onions and saute until fragrant.
  3. Add the beaten eggs and using a spatula, scramble the eggs slowly.
  4. Half-way through the cooking add-in the tomatoes, olives, feta and parsley.
  5. Fold the ingredients together until the eggs are just cooked through.
  6. Transfer to a plate and enjoy warm.

Notes

  1. Serve with a slice of sourdough bread.
