Vegalicious –
These are very tasty! They are easy to make and depending on whether you use a microwave or bake them, they don’t take too long to make.
Serving Size: 2
Ingredients:
- 2 lbs. organic baking potatoes
- vegetable oil cooking spray
- coarse salt
- herbs and spices of choice
Directions:
- If baking, preheat the oven to 400 F / 204 C.
- Wash the potatoes and pat dry.
- Slice very very thinly using a mandolin or food processor.
- Place the sliced potatoes in a large bowl of cold water to wash off the extra starch to make them crispier.
- Remove from the water bath and lay individually on paper towels.
- Blot the potato slices dry.
- Prepare cookie sheets with baking parchment.
- Lay the potato slices separately on the baking parchment.
- Spray with a thin layer of cooking oil and sprinkle with salt.
- Optionally sprinkle with any herbs you enjoy.
- If using the microwave, place in the microwave on high and cook for 5 minutes.
- Allow to “rest” for 1 minute, then microwave again for 3:30-4:00 minutes longer.
- Remove from the oven when golden brown.
- Cool completely before storing in an airtight container.
- Repeat with the remaining potato slices, using more parchment.
- If you are baking them, you will want to bake them for 20-30 minutes.
- If making a lot, this will take time for successive baking sheets.
- When the chips are done, place in a airtight container.
