Orange Chicken Makeover
Sweet, spicy and flavorful – a lighter alternative to the popular Chinese fast food take-out dish and it's quick and easy to make!I had a request a few weeks ago to make over this popular American-Chinese fast food dish which is usually battered and deep fried. To be honest, this is not a dish I would order because I'm not a fan of battered sweet Chinese dishes, but I was happy to tackle a lighter version. My solution was skip all that frying, and make a flavorful orange sauce. The outcome was great, and my husband even gave it two thumbs up!I served this over…
Obesity and Depression: Are They Connected?
Those with excess weight often suffer from depression. That’s no secret. What we’re unsure about, though, is which comes first.Does being seriously overweight directly lead to depression in some people?Or, does depression cause excess weight gain?Perhaps it doesn’t really matter in any practical sense anyway, but depression and weight gain certainly seem to go hand-in-hand.Researchers suggest the two conditions are indeed interdependent, but there isn’t any way of knowing which came first. One study found that women with excess weight were 27 percent more likely to develop depression than women of normal weight. In another study, researchers found that depressed people tend to gain weight faster than …

Strawberry Custard Tarts
Farmers markets are always a wonderful source of inspiration, and a visit to my local farmers market on Sunday was no exception. We arrived home with a wonderful bounty of beautifully sweet unwaxed apples, a bunch of beetroot, potatoes, beans, roma tomatoes, purple carrots, asparagus, strawberries and the biggest bunch of basil I’ve ever seen. There’s So Much In This World We Can Learn
Breakfast to BedToday marks eleven years since we lost one of the most loving and inspirational voices of our time: Mr Rogers. I remember watching episode after episode of “Mr Rogers’ Neighborhood” while eating my rice and milk. (rice, milk, and honey was one of my favorite breakfasts.) I loved his lessons about confidence, peace, and love. I was fascinated by his love of books, as it was so similar to my own, and his vast collection of awesome zip-up cardigans. He…
Blue Sky and Bento Lunch
We have officially had the warmest and driest winter on record in California and although I love the sunshine and blue skies the lack of rain is really affecting the crops. We grow A LOT of things in California. I’m sure the prices at the supermarket will soon reflect the drought conditions. It was 84 for a high today and tomorrow it’s supposed to be 90. It’s crazy, it’s March! 90 degrees?!Well despite it being still “winter” I did what you should do on a Saturday with …
Livi-isms
Me: “It’s coffee time for mama” Liv: “It’s waffle time for ME” While grabbing all of her baby dolls out of her crib, “I’ve got my hands full!” After Tom gave her a bath, she was bundled up on the bed in a towel while he got her jammies together. Me: “Oh!! Don&#…
Girls Getaway in the Mountains
March 2nd marked my SEVEN year anniversary of living in Colorado… and for those of you in Tennessee, can you believe it?? It seems like just yesterday that I packed up all my essentials and moved across country! Seven years later, I am so happy I made the decision to move! Now, even though I’ve lived here for that long… I finally did something that is VERY Colorado for the first time. I finally went to the mountains in the winter! Now, I’ve spent a bit of time up in the …

Cauliflower "Fried Rice"
I LOVE fried rice, and often make my own fried rice at home with brown rice which is delicious. But sometimes when I want to cut down on my carbs, I opt for cauliflower rice.I posted this Cilantro Lime Cauliflower "Rice" a while back, and it was a huge hit. So I decided to play around with that recipe and make this Asian version to go with the Orange Chicken I posted yesterday, and my husband (who detests cauliflower) was pretty amazed how the meal turned out. The portions are generous and you get a serving or two of vegetables into your diet….
Body Image: Seeking the Impossible
Body image issues are always complicated. But, when they appear in extremely young girls, it becomes particularly worrying. This crazy fad hurts women both mentally and physically, but I need you to know that we have the power to stop it.I’m talking about a disturbing trend where women, mostly young girls, seek the elusive “thigh gap,” or a pronounced space between the thighs. If you’ve ever come across this trend on social media sites like Pinterest, Tumblr or Instagram, you’ll know it is mostly extremely thin females who are promoted. It’s clear, many of them have an eating disorder, yet they are being held up as the perfect body for the young women …

Fatty McFatfat
Breakfast to BedRant Ahead. The notion of butter, the idea of it, has begun to fall in one of two camps: one-elevated above all other fats. Worshipped for its flavor, its simplicity, its purported benefits to mind and body. The second camp, it’s viewed as heretical to imbibe. Why eat something that is a…
If you see my brain
You guys. I guess my brain only has limited space right now -it’s even worse since I birthed it two years ago- because I had not one, but two major fails yesterday. I got to the studio to teach my second Zumba class and couldn’t figure out why no one was there. Even my friend Megan, who was going to team-teach with me, was not there. I’m sitting in the office, look at the clock around 6:10 after 15 minutes of waiting and realize. My class is at 6:30, not 6. It’s ALWAYS been at 6:30. Better super early than super late, though. I killed time by reading a…
Grilled Tomato Biscuits with Laughing Cow Cheese
If you follow me on Instagram, you know by now that I have an obsession with tomatoes. Grape tomatoes, heirlooms, or romas… I love them all. I love the color and my goodness I love the taste. I’ve also shared over the years that I am not the biggest fan of breakfast. It’s weird though… if you subtract the eggs from the menu, detour from the sweets and head to savory town, I’m suddenly a fan of breakfast again. Today’s recipe is one of my favorites and it combines three things I absolutely adore: Beautiful grilled tomatoes Laughing Cow Cheese {From my Tennessee Roots} A Biscuit The other great part is that it’s incredibly easy to make, and there’s something satisfying about …
On eating meat
photo by Kevin Dooley I, Andie Mitchell, am crazy about animals. So let’s start there. I’m one of those annoying people who emails friends with the latest video of a squirrel and a duck playing together. I can’t pass a dog on the street without breaking into a wide-eyed grin and saying hello in this really crazy, babyish voice (absolutely as terrible as it sounds). I cry when I pass a dead raccoon on the side of the road. Just a month and a half ago, I found a teeny tiny mouse, …
