Flynn Summer Salad  – Vegan Action

This delightful salad features sweet, ripe peaches and plump, juicy tomatoes perfectly complemented by a fragrant mint basil dressing. All of this deliciousness served over a bed of spicy arugula, creating a harmonious blend of flavors and textures that will leave your taste buds craving more. It’s a light refreshing salad that’s great for any summer meal. 

Serving: 4-6

INGREDIENTS 

  • 2lb peaches, sliced 
  • 1lb cocktail tomatoes, quartered
  • 1 English cucumber, sliced 
  • 1 red onion, thinly sliced 
  • 1 avocado, sliced 
  • 5oz baby arugula 

DRESSING

  • 1/2 cup white wine vinegar 
  • 1/2 cup white balsamic vinegar 
  • 10 mint leaves, sliced 
  • 1 tbsp basil, sliced
  • 1/3 cup olive oil
  • 1 tbsp agave 
  • 1/2 tsp poppy seeds 
  • 1/2 tsp celery seeds 
  • Pinch of pink salt 
  • Pinch of cracked black pepper

DIRECTIONS 

  • Add all of the dressing ingredients to the bowl and mix well. Set the dressing aside while you prepare the rest of the salad. 
  • In a large serving bowl, arrange the arugula as the base. Layer the peaches and the vegetables on top, then drizzle with the prepared dressing. Gently toss the salad to ensure the ingredients are evenly coated.
