Sesame Beef Lettuce Cups

Serves 4
For the dipping sauce
- 3 tablespoons honey
- 2 tablespoon tamari
- 2 tablespoon rice wine vinegar
- 1 teaspoon toasted sesame oil
- 1/2 teaspoon chili flakes
- 2 spring onions, sliced
For the lettuce cups
- 1 tablespoon avocado oil
- 1 large onion, diced
- 2 cloves garlic, minced
- 2-inch piece ginger, minced
- 1/2 teaspoon chili flakes
- 1 pound lean ground beef
- 1 tablespoon tamari
- 2 teaspoons fish sauce
- 1 cup shredded carrot (approximately 2 carrots)
- 1/2 cup fresh cilantro, chopped
- 2 tablespoons toasted sesame seeds
- 1 head boston lettuce, leaves washed, dried and separated
Instructions
- In a small bowl, combine all the ingredients for the dipping sauce and set aside.
- Heat the avocado oil in a large saute pan over medium heat and add the onion, garlic, ginger and chili flakes. Saute 2 minutes until fragrant.
- Add the beef and, using a wooden spoon, begin breaking it into small pieces. Add the tamari and fish sauce and saute until the beef is cooked, about 7 minutes.
- Add the shredded carrot, cilantro, sesame seeds, toss and remove from the heat.
- Serve the beef in the boston lettuce cups with a drizzle of the dipping sauce.
